Lasagna/Lasagne

Lasagna (singular) 
Lasagne (plural) 



This flat pasta was originated in Italy. A very easy to prepare and you can have all the ingredients ready on the counter. 

I love baking lasagne even I'm still in the Philippines, but you can't have the best cheese. I remember I used to ask my husband to bring home some good cheese from Italy, just to satisfy my cooking/baking and make my lasagne as perfect as it can be. 

And now that I'm now here in Italy. I love going to the cheese section to choose from different variaties. I should say, we should really invest in good cheese, some are expensive but worth the price! 

"Age doesn't matter if you are a cheese" 

Let's start baking lasagne

Ingredients: 
18 flat pasta (lasagna)

1/2 cup spring onions (chopped)

1/2 cup basil leaves (chopped)

700g ground beef

1tsp salt

1tsp pepper

4 cups tomato sauce 

2 cups bechamel sauce (you can make your own bechamel sauce if not available: put 1tbsp butter in a pan, add 2cups fresh milk and add some flour and stir on desired thickness) 

100g parmessan cheese

100g mozzarella & provolone cheese ( I used the mix cheese on this recipe, but you can leave out the provolone & use mozzarella)


Steps: 
1. Put your lasagne or flat pasta in a tray with warm water and soak it for 20minutes



2. Cook the beef filling. In a pan put olive oil sautè spring onions and add the beef, mix until brown, season with salt & pepper and add the tomato sauce cook for 5minutes, then add the chopped fresh basil leaves.


3. And now ready to layer your lasagne & fillings. (Easy right?)




4. Bake at 200'C for 15-20minutes depending on your oven.

Apple turn overs




Apple turn overs made with a kiss of cinnamon! A delightful & healthy merienda that your family will surely enjoy every bite! 

Ingredients: 
5 granny smith apples (cut into cubes) 
1/2 cup brown sugar 
1tbs cinnamon powder 
pinch of salt 
1tbsp butter
pastry puff or sfoglia
1 egg (eggwash) 

Steps:
1. Put the apples in a bowl add the brown sugar, cinnamon & salt. Cover for 30 minutes. Let the liquid of the apples to shrink at te bottom of the bowl. 

2. In a medium heat the  skillet and butter or grease.

3. Drain the apples and put in the buttered skillet. (Set aside the liquid)

4. Now add the liquid of the apples. Let there for 3minutes until thick. 

5. Add a tsp of flour to thicken the syrup and stir. (Let the apples to coold down in room temperature and will start to wrap. 

6. Cut the pastry puff in to four. 


7. Use an eyeball for every apple filling. 

8. Brush with eggwash to let it put into place while baking. 



9. Pinch the edges to secure the it doesn't spoil. Put some wholes to let the heat escape while baking.


10. Bake it about 180'C for about 20minutes and golden brown.

Embutido

Embutido is most likely a Filipino version of meatloaf or mixed beef-chicken dish! 

This is my own & original version of "embutido" It's not your usual embutido on the table but I'm sure you'll like it! Hope you do! 

I usually partner it with garlic fried rice "sinangag" and sunny side up egg! 

I called it "embutido" my husband used to call it "morkon" or "morhon" and my daughter knew it as "hotdogs" 

I prepared my ingredients by putting the vegetables in a food processor and also the ground beef to make it more fine and also the chicken breasts. But you can also so do it by hand by minced chopped. And just mix it all together! 

I know you can make it too, especially to those who are missing Pinoy foods this is your chance to make it and give your child a chance to taste Pinoy foods even we are out of the country!

2000 gms ground beef

831 gms ground breast chicken

8 carrots

1 red bell pepper

1 green bell pepper

1/2 cup onion 

25 gms raisins

1/2 cup bread crumbs 

100 gms parmessan cheese 

3tbs tomato sauce

2 raw eggs

3 hard boiled eggs 

3 hotdogs 

4 tbs salt 

1 tsp ground black pepper

Ensaymada - Cheesy Pinoy Buns


Baked some "Ensaymada" today a very well-known Filipino buns which I know originated mostly in Spain. And one of my favorite childhood pinoy merienda! So I decided to make some for my daughter to taste even we are not in the Philippines. And I really miss eating ensaymada! The best cheesy buns! 

*These freshly baked buns are dip in sugar-melted butter and sprinkled with cheese!

Ingredients: 

630g all purpose flour

150g white granulated sugar

170g melted butter

1 pinch of salt 

2 raw eggs 

225 g of cheese

1 pouch of rapid rise yeast

1 cup warm water

Cottura al Forno/Baking

Buongiorno a tutti! A great day indeed! Are you rushing again on a pasticceria or bar to get some café and pane?
It's winter time, but if you are like me who loves to eat but lazy to go out because of the super cold weather outside why not try to bake? Try to cook something to heat you up! "Pandesal" the most popular bread in the Philippines. Pandesal is the favorite “agahan or almusal” breakfast/colazione of most Filipinos. Pandesal can eaten plain or with filling. It is best to have it while freshly hot from the oven. And I brought it here in Milan, "freshly baked bread are the best!"

My fudgy-bat-bites and my forever favorite cream-cheese brownies! I baked those for the halloween party held on my sister-in-laws club at Zeppelin! My hubby's forever favorite since I've tried to bake it last Septemer, we saw it on Fast Food Man show on TV they featured a restaurant in America and a nonna refer to it as "a piece of heaven on earth" and when I tried a bite, OMG nonna was absolutely right! Blueberry-strawberry cheesecakes and keylime pie cupcakes! Keylime pie are heaven's creation! I just tried baking it on a muffin pan but baking it as "key lime pie" as real pie is the best in the world! 


Banana-Nutella Pancakes and Sugar-Buttered Pancakes. "Pan cakes" are really morning energy booster! My husabnd's favorite breakfast! Buon appetito :P

Made some healthy chicken tacos with parmessan dressing for merienda today! Yeah Healthiness! My hubby and daughter enjoyed every bite and the crispiness of the vegetables! Buon appetito a tutti!
